You Know It's Summer When the Watermelon's Are Ripe!

🍉Watermelons are a low calorie fruit that have a number of vitamins and minerals that can help fight inflammation and prevent a significant  amount of illnesses.

🍉This specific melon is rich in antioxidants that fights free radicals in the body. One of the antioxidants is lycopene, it has amazing health benefits including the little known history of helping to prevent breast and prostate cancer.


🍉 Lycopene also has a greater than average ability to quench free radicals that cause damage to cells.

🍉 Lycopene gives many fruits and vegetables their red color. Strangely enough the red color in cherries and strawberries is not caused by lycopene.

🍉 Watermelon juice can also relieve muscle soreness due to the amount of amino acid in the pink of the flesh and the green rind.

This weeks recipe is 
watermelon, olive, caper & feta salad from Eating Well. Again feel free to comment on how your salad turned out  ❤️.

Watermelon, olive, caper & feta salad


​INGREDIENTS:
  • 2 tablespoons extra-virgin olive oil plus ¼ cup, divided
  • ¼ cup rinsed capers
  • ⅓ cup pitted Kalamata olives, halved
  • 1½ tablespoons sherry vinegar
  • Ground pepper to taste
  • 5 cups diced watermelon (1-inch)
  • ½ cup thinly sliced fresh basil
  • ½ cup thinly sliced fresh mint
  • ⅔ cup coarsely crumbled feta cheese
  • ¼ cup sliced almonds, lightly toasted
  • Flaky sea salt for garnish
   
DIRECTIONS:
  1. Heat 2 tablespoons oil in a small saucepan over high heat. 
  2. Pat capers dry and add to the hot oil. 
  3. Cook, stirring, until crisp, 1 to 3 minutes. Using a slotted spoon, transfer to a paper towel-lined plate. (Discard the oil.)
  4. Whisk the remaining ¼ cup oil in a large bowl with olives, vinegar and a generous grinding of pepper. 
  5. Add watermelon, basil and mint and gently toss to coat. 
  6. Arrange in a large shallow serving bowl. 
  7. Sprinkle with feta, almonds and the crispy capers. 
  8. Garnish with sea salt, if desired

I guess watermelon would be something I really needed today. A doctor told me people with my condition needed the green part of red watermelons. I wonder how many whole balls of watermelon should be distributed to friends to fill one pitcher of that green part. This is because I obviously can't consume that much. Since it's all just water, I can't help but wonder if I might be able to possibly finish eating everything without anybody's help. I wouldn't want to do that though. I wish I can go back to those days when my body is more tolerant.
