🎉 🎉 I learned so much about the health benefits of lettuce when researching this post!🥗 I really thought that I was going to be writing about the fiber in lettuce, but there is so much more! 🥗 Lettuce is one of the most valuable healing foods because of it's high organic water content. 🥗 Lettuce also has nearly all the necessary vitamins. 🥗 Did you know: the outer leaves have the most nutrients. Yes, I'm guilty of tossing those, too. They usually don't look as nice. 🥗 The greener and darker the leaf, the more nutritious it is. 🥗 Lettuce contains the most silicone of all common vegetables. Silicone helps renew joints, bones, arteries and all connective tissue. 🥗 Lettuce is at it's medicinal best when it has bolted to seed. the milky juice contains sedative, narcotic, and anesthetic properties. 🥗 Lettuce contains magnesium, chromium, and folate, all of which contribute to it's calming effect. 🥗 Lettuce is also know to help cure insomnia and nightmares, probably due to the minerals above. 🥗 In both ancient Egypt and ancient Rome, lettuce was served at the end of the meal to bring on sleep. 🥗 Lettuce also contains anti-bacterial and anti-fungal properties. The lactucarium from the milky latex, can eradicate various types of yeast, including candida. 🥗 The terpenes and cardenolides found in lettuce can protect from harmful microbes. 🥗 Interestingly, extracts from lettuce are found to be neuro-protectors. They can reduce neural cell death due to a glucose metabolizing property. 🥗 Lettuce is also rich in anti-oxidants, which helps fight inflammation. 🍴 So let's eat more salads! Don't forget to slice some of the radishes from last week!

I have been sick and overweight lately. Everyone thinks it's because of childbirth but I noticed that I was still skinny a few months after I gave birth. Maybe it had a lot to do with what I eat. I have been eating a lot of carbs for years now. If I remember it right, I used to have a balanced diet of greens way back. I guess anyone can get sick if they will stop eating vegetables. I told myself I won't allow myself not to be in control of what I eat again but sometimes we can't help but just accept whatever is in front of us. I have been late to realize this is not healthy.

Some hard core vegetarians remove mushroom from their diet because they think it's alive. I say well aren't plants also like that? When you cut them, they don't really feel pain. It's just like having a haircut. Mushrooms can be tricky they say. They said it's microscopic cells are alive. I guess that fact won't be enough to make me stop eating mushrooms because for me they are the next best thing to beef or tofu. I love them on my pasta and burgers. I don't think I will ever survive a day without mushroom fries.
