Beet RootBeets are one of nature's bodily cleansers, which is great to combat the toxic world we live in. They dissolve and eliminate acid crystals in the kidneys, detoxify the liver and gallbladder, and eliminate acid material in the bowel. Wow! Beets also contain contain natural chlorine, which helps wash away fat, which might otherwise build up in the cells of the liver, kidneys, and gall bladder. They also stimulate lymph fluid and lubricate the intestines (ie. helps with constipation). The beet greens have an even higher nutritional value, but because of their high content of oxalic acid, you want to practice moderation.
I'm a food nerd, this excites me. Last night, I diced some red and golden beets, tossed them in olive oil, and roasted them in the oven at 400 degrees for about 35 minutes, then sprinkled them on my salad. Yumm! Everyone loved it, even the kids! Please share your favorite way to prepare beets!!!
